Departmental Overview
At Cal Dining, we believe that "breaking bread together" is a unique aspect of dining on-campus with friends, faculty or staff. Our focus is on nourishing the Cal community, both for physical and social well-being, through customer-driven programs, culinary excellence and campus social responsibility.
We are currently seeking Contract Sous Chefs for Kosher Kitchen who will assume a leadership role in the kitchen in organizing and directing the production staff for residence hall meal service. Reports to General Manager and may take directions from Chef Manager. Follows policies, rules, and regulations of the University and the department. Ensures that health and safety guidelines are practiced. Performs other related duties as assigned. The Sous Chef will be involve in all aspects of food service operations, including preparation, serving and presentation of food and beverages; dining and serving area set up; cleaning of the facilities, equipment and tableware; greeting customers, checking meal cards and executing transactions.
Prepares assigned menu items following department recipes in accordance with departmental policies and procedures
Follows Hazard Analysis and Critical Control Points principles of food preparation, safety and sanitation at all times
Ensures quality control and Hazard Analysis and Critical Control Points are met and adhered to during food production and service
Oversees kitchen staff and ensures all food service health, safety, nutritional, recipe, policies and guidelines are adhered to at all times
Provide assignments to cooks and recommends performance ratings for production staff to management
Able to identify and resolve a wide range of quality assurance issues in creative and imaginative ways
Safely operates and maintains the following equipment used in food production and service: mixer, food chopper, ovens, steamers, fryers, grills, thermotainers, can opener, steam jacketed kettles, knives and utensils
Ensures the cleanliness, safety, and sanitation of designated storage and work areas; large and small equipment and utensils used in food production
With Chef Manager, plans work schedules
Required Qualifications
Intermediate to advanced knowledge of food and production
Requires verbal and written communication in the English language, active listening, dynamic flexibility, critical thinking, multi-task and time management
Requires decision making, reasoning, ability to develop original ideas to solve problems, operations analysis, quality control analysis and effective interpersonal and work leadership skills to provide guidance to all levels of personnel
Computer applications skills
Preferred Qualifications
High school diploma or equivalent experience
Culinary Degree
Servesafe Certification

Don't Be Fooled

The fraudster will send a check to the victim who has accepted a job. The check can be for multiple reasons such as signing bonus, supplies, etc. The victim will be instructed to deposit the check and use the money for any of these reasons and then instructed to send the remaining funds to the fraudster. The check will bounce and the victim is left responsible.
